Ronmienezky “Ronmie” Cavalieri learned about WESST through her community, most notably her sister, who owned a restaurant and received support from WESST. In October 2025, Ronmie scheduled a consultation with our team and began to build a structured plan to formalize and grow her charcuterie business, Oliva Cheese Board. Like other small business owners, Ronmie had her fair share of challenges. She needed guidance to register her business, better understand licensing and taxes, and she needed access to a commercial kitchen to scale production.


Ronmie, primarily a Spanish speaker, was encouraged to work with WESST’s bilingual team, and she was able to communicate in Spanish to refine her marketing strategy, pricing structure, prepare for funding, and license her business as an LLC. Originally from Venezuela with a background in marketing and business administration, Romnie created a bilingual pairing menu and newsletter to help educate her customers and help her business stand out. She was also referred to our partners at The Street Food Institute to access their commercial kitchen facilities.


What initially started as a creative side business, Olivia Cheese Board expanded beyond family and friends during the 2025 holiday season. Romnie launched her products at small markets and served outside clients for the first time. With WESST’s guidance, she tracked her first recorded sale and officially marked the start of her business operations. She was recently accepted into the 2026 Albuquerque Rail Yards Market and is now preparing to pursue funding for a mobile charcuterie cart that will allow her to serve events and expand catering services.
